Ingredients for Malai Kofta

For Kofta:

  • 2 cups boiled potatoes
  • 1 cup grated paneer (cottage cheese)
  • 2 tbsp cornflour
  • 1 tsp garam masala
  • Salt as required
  • Oil for frying

For Gravy:

  • 2 onions (chopped)
  • 3 tomatoes (pureed)
  • 1 tbsp ginger-garlic paste
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp cumin powder
  • 1 tsp garam masala
  • ½ cup fresh cream
  • 2 tbsp cashew paste
  • Salt as required
  • Oil or ghee for cooking

Step-by-Step Malai Kofta Recipe

  1. Prepare Kofta Mixture
    Mash boiled potatoes and paneer. Add cornflour, garam masala, and salt. Mix well.
  2. Shape and Fry Koftas
    Roll the mixture into small balls. Heat oil. Fry the balls until they turn golden brown. Place them aside.
  3. Cook the Onion-Tomato Masala
    Heat oil in a pan. Add chopped onions. Fry until golden. Add ginger-garlic paste. Cook for a minute. Add tomato puree and cook until the oil separates.
  4. Add Spices and Cashew Paste
    Mix in turmeric, red chili, cumin powder, and garam masala. Add cashew paste. Stir well.
  5. Prepare the Gravy
    Add water as required. Let the gravy simmer. Pour in fresh cream. Stir until smooth and creamy.
  6. Add Koftas to the Gravy
    Place fried koftas gently into the hot gravy. Simmer for 2–3 minutes.
  7. Serve Hot
    Garnish with fresh cream and coriander leaves. Serve Malai Kofta with naan, roti, or steamed rice.
